Cult dish? Fried tofu full of fondant Comté, XO sauce
After the success of Servan, a little bit additional down the road, the Franco-Filipino sistas Katia and Tatiana Levha are giving us a Double Dragon! A nod to the cult arcade recreation launched in 1987, this cool spot aligns good outdated US 90’s rap, weathered furnishings, scratched partitions pimped with serigraphs by Beijing artist Yue Wu… And delirium golri with neon dragon and puppet dragon from parade within the veces! To completely perceive the recreation : This isn’t a Chinese language restaurant. Chef Antoine Villard (ex-Septime, Fulgurances…) is actually impressed by Asia, however it’s a (re)inventive reinterpretation, typically twisted with a European contact. Like this frankongkongais fried tofu full of melting county, to dip in an XO sauce with shrimps. It is punk, unbridled, eminently gratifying, it flows in all places, we stick our fingers in it and we like it!
From the menu, we dig with delight from an entire slew of extremely addictive small plates (€6-18), which we share as a bunch – a couple of spherical tables geared up with turntables, very sensible! Throughout our final go to (June 2019): bowl of chilli cockles drowned in a deluge of spring onions and really spicy rooster wings – hearth! –; succulent pork stomach caramelized with tamarind, served on a mattress of rice, topped with vinegared cucumber and shiitake; and even contemporary spring rolls with melt-in-your-mouth beef chuck, spicy sauce, overflowing with mint, chilly noodles, grated carrots… To be moistened plain with a Sicilian white SP 68 from Arianna Occhipinti (€42 a bottle), earlier than ending on an insane sugar-salt-chilli watermelon. (B)eat all of them!
